Oysters Rockefeller

Ingredients

* 2 slices bacon
* 24 unopened, fresh, live medium oysters
* 1 1/2 cups cooked spinach
* 1/3 cup bread crumbs
* 1/4 cup chopped green onions
* 1 tablespoon chopped fresh parsley
* 1/2 teaspoon salt
* 1 dash hot pepper sauce
* 3 tablespoons extra virgin olive oil
* 1 teaspoon anise flavored liqueur
* 4 cups kosher salt

Directions

1. Preheat oven to 450 degrees F (220 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. Clean oysters and place in a large stockpot. Pour in enough water to cover oysters; bring the water and oysters to a boil. Remove from heat and drain and cool oysters. When cooled break the top shell off of each oyster.
3. Using a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley. Add the salt, hot sauce, olive oil and anise-flavored liqueur and process until finely chopped but not pureed, about 10 seconds.
4. Arrange the oysters in their half shells on a pan with kosher salt. Spoon some of the spinach mixture on each oyster. Bake 10 minutes until cooked through, then change the oven's setting to broil and broil until browned on top. Serve hot.

Baked Oyster

Ingredients:

1 1/4 stick butter
1/2 cup olive oil
1/2 cup chopped green onion
1/4 cup chopped fresh parsley
2 tbsp minced garlic
1 1/2 cup seasoned bread crumbs
1/2 cup parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 tsp dried basil
1 tsp dried oregano
8 cups oysters (or I use a bucket, net weight 2 lbs I think)

Preparing:
- Drain oysters on paper towels

Cooking & baking:

- Heat butter and oil in large skillet
- Sautee onions, parsley, and garlic in butter and oil
- Separate pot mix everything else in order listed
- Throw dry ingredients into skillet, mix well
- Turn heat off, stir in oysters

Bake 425 degrees, 15 minutes.

Có một chuyện trong việc ăn Oyster (tùy người tin hay không, riêng tôi thì Tin) là đừng ăn Oyster vào những tháng có chử "R" trong Anh ngữ (vào google check "oyster month" là thấy ngay....

sao ông nói ngược với nguòi ta vậy ?

Folklore says that oysters should be eaten only in months with "r's" in them—September, October, etc. Maestro S.V.P. educates people that oysters can be eaten 12 months a year. The notion that oysters should not be eaten in "r"-less months—that is, months that occur during warm weather—may have started in the days when oysters where shipped without adequate refrigeration and could spoil. But today all that has changed and we can enjoy oysters twelve months a year.


The old saw goes something like this: "Never eat oysters in a month without an 'R' in it."
